Skillet Huevos Rancheros

Makes 4

1 16 oz jar of White Girl Salsa (I like it hot!)

1 15.5 oz can black beans, drained or rinsed

4 large eggs

1/4 chopped fresh cilantro

4 small flour or corn tortillas

Optional toppings:  cheese, sour cream, scallions, avocado

You’ll want to use a skillet that has a lid that fits.  Pour jar of salsa and beans into skillet.  Heat over medium heat until warm. Make 4 small wells in the mixture using a spoon.  Crack one egg into a small bowl and gently pour the egg into the well.  Repeat with remaining three eggs.  Cover and simmer 3-5 minutes for runny yolks or longer for more firm yolks.  Place 1/4 of mixture on one tortilla and top with toppings.
